I gave this deliciously wicked cocktail a try on old Hollow’s Eve, but I’ll definitely be enjoying this tasty libation throughout autumn. It embraces all the flavors of autumn with that kick of gin making it the perfect accompaniment to any seasonal festivity. I’m pretty sure this is one cocktail recipe you’re going to want to add to your fall repertoire.
- 1½ oz. gin
- ¾ oz. rosemary + clove infused simple syrup
- 1½ oz. infused apple juice
- ½ oz. lychee juice
- 1 sprig rosemary, to garnish
To start, you’ll need to make the simple syrup and the infused juice…
Rosemary & Clove Simple Syrup:
- ½ cup sugar
- ½ cup water
- 1 oz. whole cloves
- 3 sprigs rosemary
Combine the sugar, water, cloves, and rosemary in a saucepan over low heat. When the mixture reaches a boil, remove from heat and let sit for 30 minutes. Strain into a jar and store in the refrigerator, or use right away. This will yield more than enough syrup for two drinks.
Infused Apple Juice
- 1/2 cup apple juice or cider
- Juice of 1/2 of a lemon
- ½ tsp. fresh rosemary
Infuse apple juice with lemon juice and rosemary ideally overnight or at least for a few hours.Strain into a jar and store in the fridge.
While the prep may take a little extra effort, I assure you it’s completely worth it. And now to finally make the cocktail!
Combine all the ingredients as listed above (minus the garnish) in a cocktail shaker over ice. Shake vigorously until chilled. Pour into a lowball glass, and garnish with a rosemary sprig.
