Hey, guys. It’s my birthday and I made myself a cake, ’cause that’s how I do.

I’m a self-professed chocoholic. Usually, cake does not appeal to me unless it has some type of chocolate (don’t get me wrong I’ll still eat it). The only chocolate-less cake that I completely love, and it may be my favorite cake of all time is (drum roll please) Carrot Cake. I absolutely love carrot cake.

 with core ingredients like coconut oil, applesauce, maple syrup, and almond milk this cake has a slightly nutritious base plus carrots are vegetables so eating this cake counts as eating your veggies.

Let’s make cake

 

Ingredients

3 eggs

1/3 cup melted coconut oil

1/4 cup maple syrup

1 cup of unsweetened apple sauce

1/2 cup of brown sugar

1/4 cup cane sugar

3/4 Tsp sea salt

1 1/2 Tsp of baking powder

1 1/2 Tsp of baking soda

1 tsp ground cinnamon

1 cup almond milk

1 1/2 cup grated carrots

1 1/2 cups of almond flour

1 1/2 cups of oat flour

3/4 cup chopped walnuts (optional)

1/2 cup raisins (optional)

Cream Cheese Frosting

1 stick (1/2 cup) of grass fed butter

1 package (8oz) cream cheese

4 cups of powdered sugar

Method

Preheat oven to 350 F.

In a large bowl whisk eggs, oil, and maple syrup. Next, add applesauce, sugars, baking powder, baking soda, salt, and cinnamon whisk to combine.

Add the almond milk and stir. Add the grated carrot and continue stirring. Then add flours and stir. The batter should be a thick consistency yet pourable if too thick feel free to add some more almond milk. Next, fold in walnuts and raisins to the batter until everything is well combined.

Grease three 6- inch baking pans (I only had one pan so I had to do each layer individually) with coconut oil and divide the batter evenly among the cake pans. Stick in the oven and bake for amount 20 minutes or until deep golden brown and a toothpick inserted into the center comes out clean. Once baked remove from oven and let cool.

While the cakes cool you can start working on the frosting.

Frosting Method

Start off by beating the butter in a large mixing bowl. Next, add the cream cheese and continue to mix until well combined and you have a nice creamy and smooth mixture.

Add powder sugar one cup at a time to the mixture and continue stirring until you get a nice thick frosting.

Once cakes are cooled go ahead and frost those babies. Add a nice portion of frosting to the top of each layer of cake while building up the cake. If desired you can add any remaining frosting around the cake.

Next, the most important step serve and enjoy!

 

Notes
*Make sure the cakes have completely cooled before adding frosting (or else frosting will melt) and for the flavors to develop completely
*Once frosted the cake should be stored in the refrigerator
*To adapt to vegan sub eggs for three flax eggs and butter and cream cheese to vegan substitutes.
